I consider myself a “Tacotarian”… but *gasp* sometimes even I get bored with the same ol’ taco ingredients. Truth.

The unexpected (and easy) flavors of teriyaki and grilled pineapple make this a stand-out meal with minimal effort.

These Hawaiian flavors are a hybrid of Japanese teriyaki, native Pineapple and pure summer sunshine.

Ingredients to make Hawaiian Tofu Tacos

Drain the water from the tofu container. Wrap the tofu in a clean dish towel and gently press the excess water out. Sliced tofu into bite-sized pieces and arrange in a single layer in a large container with sides. Pour teriyaki sauce over the tofu and gently toss to coat. Refrigerate for 30 minutes to marinate.

Drain & Press

Tofu is packaged in water for freshness, but this also means that it’s like a waterlogged sponge. Over the sink, use a small knife to slice along the edge of the thin, plastic top of the package. Drain the water and remove the tofu block. If we want it to absorb lots of flavor, we have to squeeze out some of the water. The longer the tofu is pressed and marinated, the more flavor it will absorb.

If I have time, I wrap the drained tofu block in a cotton dishtowel, set it on a plate, and then set my cast iron skillet on top of the tofu. “Firm” and “Extra Firm” tofu can handle this. “Soft” and “Silken” tofu will smoosh under the pressure… it’d be like putting a skillet on pudding. LOL!

(Side note: I once asked a restaurant for a veg meal, and they said they have tofu. Then they brought me a plate of sliced, uncooked, waterlogged tofu. 🤢 WRONG!)

Marinate

If you have time, leave the teriyaki-marinated tofu in the fridge for an hour… or even overnight. When you’re ready to cook, just brush a little more teriyaki sauce on top for that yummy sticky coating!

Sesame Tofu Summer Rolls are another light & easy way to enjoy air fried tofu this summer! This is my daughter’s favorite tofu: tossed in a little sesame oil & air fried. She likes them cut in “fries” and eats them right off the pan!

Bake & Assemble Tofu Tacos

Slice a fresh pineapple into chunks. Summertime!!! Arrange the marinated tofu and pineapple on a mesh baking rack or baking sheet. Cook in an air fryer or oven (top rack) at 425F for 20 minutes.

Thinly slice 1/4 of a red cabbage. Just serve, layer cabbage on tortillas, add tofu and pineapple, and topped with salsa. The sweet, juicy pineapple is pure heaven and the cool, crisp cabbage the perfect contrast.

  • 14 oz firm tofu, drained
  • 1 cup organic teriyaki sauce
  • 3 cups fresh pineapple, cut in chunks
  • 1/4 head red cabbage, thinly sliced
  • 1 cup salsa
  • 12 street taco tortillas

Instructions

  1. Drain the water from the tofu container. Wrap the tofu in a clean dish towel and gently press the excess water out.
  2. Sliced tofu into bite-sized pieces and arrange in a single layer in a large container with sides. Pour teriyaki sauce over the tofu and gently toss to coat. Refrigerate for 30 minutes to marinate.
  3. Preheat oven or air fryer to 425. If using an oven, raise the baking rack to the upper position.
  4. Cut fresh pineapple into chunks.
  5. Arrange marinated tofu and pineapple on a mesh baking rack or baking sheet. Bake for 20 minutes.
  6. To serve, layer sliced cabbage on tortillas. Top with tofu, pineapple and salsa.
