Chickpea Salad Sandwich Perfection

I used to love chicken salad sandwiches back in my carnivore days (hold the celery, please). There’s something so satisfying about that cool, creamy and savory filling. Back in the 90’s, I worked in a tiny coffee shop and made endless mountains of chicken salad with grapes in it… I never got sick of it.

Thankfully, chickpeas are a delicious substitute for chicken in just about any chicken salad sandwich recipe. No, the texture isn’t exactly the same. But chickpeas are little flavor chameleons and blend great!

And some days just call SPICY BUFFALO flavor, y’know?

Ingredients

If you have been eating plant-based for a while, you probably have vegenaise (or other vegan mayo) in your fridge. All of the other ingredients are grocery store and pantry staples.

Spicy food gets spicier, the longer it’s in the fridge! I used 1 Tbsp of hot sauce in this recipe. If you are sensitive to spice, you may wish to use less (especially if you will not be eating it right away). If you LOVE hot and spicy, add more hot sauce to your taste.

Smash, smash, smash!

I briefly considered pulsing the ingredients in a food processor… but I didn’t want the extra dishes. That’s mom life for ya!! Just grab a fork and smash all of the ingredients together until well combined but still a little chunky. No cooking, just smashing. Zero to buffalo chickpea salad in 10 minutes flat.

Chickpea Salad Serving Ideas

This chickpea salad is equally delicious on whole wheat bread and buns. Substitute gluten-free buns/bread/rolls, as needed. For a low-carb option, enjoy chickpea salad in lettuce wraps or scooped on top of a cool, crisp salad. … Or you can be like me, standing in front of the fridge, eating it with a spoon out of the tupperware.

Buffalo chickpea salad sandwiches are perfect for meal prep, road trips or air travel. Life is too short to just eat peanuts and coffee!

Ingredients

  • 1 can chickpeas, drained & rinsed
  • 1/3 cup red pepper, minced
  • 1/4 cup vegenaise (vegan mayo)
  • 1 tbsp hot sauce (to taste)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/4 tsp salt
  • 4 slices whole wheat bread
  • 1 cup lettuce

Instructions

Combine all ingredients in a medium bowl. Smash with a fork until well combined, but still chunky. (Pulsing in a food processor would be equally effective).

  1. What an awesome spin on a traditional buffalo salad! I love that this has plenty of fiber and great texture. I wouldn’t miss the meat at all!

  2. I love the idea of a vegan buffalo sandwich. We eat plant based 80% of the time so always on the lookout for new great recipes. Will definitely be trying this.
