Enjoy the best Easter dessert in a pop-able size. Plant-based carrot cake bliss balls are ready in 10 minutes & no baking. Kid-approved!
My husband and I both love carrot cake SO much, that it was our wedding cake! And with Easter a week away, having carrot cake “bites” in the fridge are the perfect sweet nibble for adult and kid bunnies alike.
My little bunny had fun adding each ingredient to the food processor and rolling them into balls. Even the littlest hands can help roll the balls! No worries about sneaking bites because there are no raw eggs.
These are also perfect “energy bites” for the afternoon slump. Filling & heart-healthy nuts, natural sugars, and 6 grams of plant-based protein in 2 carrot cake bites mean natural energy with no crash.
Let’s Make Carrot Cake Bliss Balls!
In addition to delicious carrot cake flavor, these gluten-free bliss balls are ridiculously simple. If you have 10 minutes and a food processor (or high-speed blender), you can make these during a commercial break!
Step 1: Dump all of the ingredients in a food processor.
Step 2: Roll the carrot cake “dough” into balls.
Roll bites in extra coconut flakes, if desired. For a more decadent version, try dipping the balls into cream cheese or cream cheese frosting!
I just wanna grab one of these cute little bites through the screen!
Just like my pink & chocolate Valentine crispy treats (also gluten-free), these delicious carrot cake bites are a holiday treat you can feel great about!
