My husband and I both love carrot cake SO much, that it was our wedding cake! And with Easter a week away, having carrot cake “bites” in the fridge are the perfect sweet nibble for adult and kid bunnies alike.

My little bunny had fun adding each ingredient to the food processor and rolling them into balls. Even the littlest hands can help roll the balls! No worries about sneaking bites because there are no raw eggs.

Let’s Make Carrot Cake Bliss Balls!

Easy ingredients: carrot, dates, walnuts and small ingredients in bowls

In addition to delicious carrot cake flavor, these gluten-free bliss balls are ridiculously simple. If you have 10 minutes and a food processor (or high-speed blender), you can make these during a commercial break!

Step 1: Dump all of the ingredients in a food processor.
Step 2: Roll the carrot cake “dough” into balls.

Roll bites in extra coconut flakes, if desired. For a more decadent version, try dipping the balls into cream cheese or cream cheese frosting!

Carrot Cake Bliss Balls (Gluten-Free)

  • 6 Medjool dates, pitted
  • 3 carrots, quartered
  • 1/2 cup walnuts
  • 1/2 cup shredded, unsweetened coconut
  • 1/2 cup gluten-free rolled oats
  • 2 Tbsp honey
  • 1 Tbsp vanilla extract
  • 2 tsp ground cinnamon
  • 1/2 tsp ground ginger


  1. Blend all ingredients in a food processor until well combined and sticky, but not a paste.
  2. Use wet palms to roll the carrot “dough” into balls. 
  3. Optional: pour extra shredded coconut into a small bowl, and roll the balls in the coconut to coat the outside.
  4. Store in the refrigerator for up to a week.


This recipe is gluten-free and vegetarian. Rolled oats (not gluten-free) may be freely substituted, as desired.

For vegan, gluten-free carrot cake bites, substitute maple syrup for the honey.
