Berry Crisp: Summer in a Bowl

I grew up eating my Grandma’s peach cobbler. Lots of sugar and butter crumbled over fresh, sliced peaches. And while it’s amazingly delicious, it’s not exactly nutritious!

A few days ago I was daydreaming about cobblers, crisps and crumbles. (Yep, there’s a difference, who knew!) I thought wistfully, “I wish I could eat them every morning for breakfast.” Then that little recipe-inventing lightbulb went off: BING! GRANOLA!

After some googling, it turns out… it’s already a thing. 🤷🏼‍♀️Not gonna stop me from putting my own twist on it!

Let’s Make Easy Granola Triple Berry Crisp

Simple, fresh and natural ingredients go into this baked berry dish with a crispy topping. It honestly is nutritious enough for breakfast… maybe with a scoop of cool coconut yogurt on the side?

Triple Berry Filling

Fresh strawberries, blueberries and blackberries go in a baking dish. In a small bowl, stir lemon juice, almond extract, cornstarch and agave nectar (a plant nectar with a flavor similar to honey). Pour over the berries and toss.

Easy Granola Topping

In a small sauce pot, heat nut butter and granola to combine. Gluten-free granola or high-protein granola are both delicious here!

Pour topping over filling. Bake!

As you’re looking towards sweet spring days and long, lazy summer bbq’s, keep this easy and delicious crisp in your “back pocket”. It comes together quickly and I’m honest here: nobody will know you didn’t add granulated sugar. Really.

If you’re headed to a potluck or just a Friday dinner on the deck, pop this in the oven while you eat dinner. It’ll be sweet cooked berry perfection when you’re done! My 9yo daughter adores this and just thinks it’s dessert.

Ingredients

Filling

  • 3 cups strawberries, halved
  • 1 cup blueberries
  • 1 cup blackberries
  • 1 tbsp agave nectar
  • 2 tsp lemon juice
  • 1 tsp cornstarch
  • 1/4 tsp almond extract

Topping

  • 2 cups organic granola cereal 
  • 2 tablespoons almond butter

Instructions

  1. Preheat oven to 375.
  2. Put all berries in an 8×8 baking dish.
  3. In a small bowl, stir to combine agave, lemon juice, cornstarch and almond extract. Pour mixture over berries. Stir to coat.
  4. In a small sauce pot, heat almond butter over medium-low heat until it begins to “melt”. Stir in granola and toss to coat well and remove immediately.
  5. Spoon the granola mixture over the berries.
  6. Transfer to the oven. Bake for 30-40 minutes.
  7. Check dish occasionally. Granola should be golden at the end, but not burnt. If granola is getting too dark, rest a piece of aluminum foil over the dish to continue cooking.
