Grilled Halloumi Kebabs with Balsamic Vegetables

What the heck is halloumi?

Halloumi is a sturdy, salty Greek cheese which is sometimes even labeled as a “grilling cheese”. It’s also made without animal rennet, so it’s perfect for vegetarians. When you cut through halloumi with a knife, it has a squeaky sound and is very firm. But once grilled or pan-seared, the outside gets a perfect crisp while the inside turns to semi-melted perfection.

Let’s Make Halloumi Kebabs!

Chop some summer veggies and grab a bottle of balsamic vinaigrette… I’ll meet ya in the backyard.

If you have a little extra time, chop the veggies and marinate them in balsamic dressing for an hour or more before making the skewers. But, if you’re ready to eat then simply drizzle the kebabs with dressing and coat on all sides.

Fire up the grill to about 400 – or use a grill pan on the stove over medium-high heat. Grill kebabs for 3-4 minutes per side.

If the veggies are nicely charred… and then heading into “burnt” territory before the cheese is nicely softened, try putting a piece of foil under the kebabs and resting another sheet over them. This will reduce the chances of burning while continuing to cook the kebabs.

My hubby had the idea to drizzle a cutting board with extra balsamic, so you could roll the grilled kebab in a little more dressing right before eating. And WOW, was that a good call! Bonus points, you look like a grill master with the lovely cutting board and kebabs… when you’re ALSO saving a dish that you have to wash!

Grilled Halloumi Kebabs with Balsamic Vegetables

Ingredients

  • 6oz halloumi cheese
  • 1 zucchini
  • 1 yellow summer squash
  • 1 red bell pepper
  • 2 cups baby bella mushrooms
  • 1 cup balsamic vinaigrette dressing

Instructions

  1. Heat grill to about 400, or a grill pan over medium-high heat.
  2. Slice vegetables and cheese into 1/2″ thick slices. 
  3. Assemble ingredients onto metal skewers.
  4. Drizzle balsamic dressing over the skewers, lightly coating on all sides.
  5. Grill for 3-4 minutes per side. 
  6. Tip: If the heat is getting too hot the veggies and cheese may get overly charred on the outside before the cheese has softened. If you notice this, reduce the heat and use oven mitts to transfer the kebabs to a large piece of sturdy foil. Cover with a second piece of foil. This will help the vegetables and cheese continue to cook, while preventing burning.

  3. We always make halloumi kebabs when having a bbq. The balsamic on these sound amazing.

    • It’s such an easy addition… you could certainly whip up your own balsamic-oil dressing, but I just used a bottle and it was so simple!
