What’s ripe in July? On these long, sunny days try vegetarian recipes that star seasonal produce like tomato, kiwi, pineapple or green beans!

The Best Seasonal Produce in July: Vine-Ripe Tomatoes
With juicy and summer-ripe tomatoes in your kitchen, every meal and snack gets a burst of flavor! Add chopped tomatoes to a rustic salad or pasta, stuff tomato halves as an appetizer, or cook them into a cozy summer dish. However you slice it (eh, see what I did there?!), tomatoes should be at the top of your produce list this July.
Pineapple: Tropical Perfection
My family has been grilling pineapple (ok and pretty much everything else) around the clock this summer. Juice, bold flavor, sweet and tangy: pineapple is perfect on the grill, mixed into a savory dinner, or added to a creamy breakfast. Grab a whole pineapple this July for a treat that your whole family will inhale!

Nature’s Sweet-Tarts: Kiwi!
Who can resist a cute, round and fuzzy little kiwi?! Ripe, summer kiwis are perfect both blended / mixed with other fruits, or on it’s own for a sweet-tart flavor punch!
Pro Tip: the easiest way to peel a ripe kiwi is to slice the ends off with a knife, and insert a spoon just inside of the peel. Run the spoon around the outside of the green kiwi just below the peel. The whole kiwi will pop out of the peel. Slice and enjoy!
Farm-Fresh Green Beans
Every year, my grandma grew an overflowing summer harvest of green beans, corn, tomatoes, berries and more. In the long, lazy summer afternoons, she would send my sister and I to the garden to pick beans for dinner. If you can get green beans that fresh, the flavor is in another league. But, even fresh store-bought green beans / string beans will be the perfect veggie for your summer table!
