A “Use What You’ve Got” Curry

Sometimes dinnertime goes sideways… the lettuce went bad for the salad you’d planned, the kids are hangry earlier than usual, you know the drill!

If you love curry, you’re in luck. It’s my favorite way to make a “use what I’ve got” dinner all in one pan.

Don’t like bell pepper? Swap it for those matchstick carrots in the fridge!

Have chickpeas? Use ’em!

It’s an easy, one-pan meal. As you cook it, you’ll realize how simple it would be to make WITHOUT A RECIPE next time and use what you’ve got. 😱 I know! Even if you’re a beginner vegan, you can cook without a recipe. Go improv, my friend.

You GOT This Black Eyed Peas Recipe!

Getting bored with eating the same plant-proteins on repeat? Girl, me too. Sometimes I grab a random assortment of beans when I’m shopping, just to know I have options. Also: cheap makes mama happy!

OK, here’s what ya do:

  • Heat a large skillet with a little coconut oil.
  • Sauce some veggies that cook quickly.
    (bell pepper, zucchini, yellow squash, onion, cherry tomatoes, asparagus, green peas, mushrooms, finely chopped cauliflower or broccoli, matchstick carrots, etc.)
  • Add curry powder, salt and pepper.

  • After about 5 minutes, they’ll be softer but not all the way done.
  • Now add a can of tender beans: chickpeas, cooked lentils, black eyed peas, butter beans.
  • Stir to coat the beans in the curry powder-veggie-mix.

  • Pour in canned coconut milk (1/2 to whole can).
  • Simmer for 5 minutes.
  • If you’re like me, add a couple dashes of hot sauce!
  • Serve with rice. (With our busy family, I constantly use those microwavable pouches of cooked brown rice 🤷🏼‍♀️).

Vegan Meal Prep: Black Eyed Peas Recipe

This curry is delicious for a quick, weeknight dinner. You can also let it cool, then divide it into four food storage containers.

Pro Tip: I like containers with dividers, to keep saucy stuff from turning grains to mush as the days pass. Same with salad dressing!

Ingredients

  • 1 tablespoon coconut oil
  • 14oz can black eyed peas, drained & rinsed
  • 1/2 onion, diced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halfed
  • 1 red bell pepper, sliced
  • 1 teaspoon yellow curry powder
  • 1/2 teaspoon roasted garlic powder
  • 1/2 teaspoon salt
  • 14oz can coconut milk
  • hot sauce, to taste

Instructions

  1. Heat a large skillet with a little coconut oil.
  2. Add bell pepper, zucchini, onion, cherry tomatoes, curry powder, garlic powder and salt.
  3. After about 5 minutes, they’ll be softer but not all the way done. Tip: a fork should still meet some resistance when piercing the zucchini.
  4. Now add the black eyed peas.
  5. Stir to coat the beans in the curry powder-veggie-mix. Pour in coconut milk and simmer for about 5 minutes. Curry is done when peas are warmed through and zucchini is fork-tender.
  6. If you’re like me, add a couple dashes of hot sauce now!
  7. Serve with rice.

Notes

This recipe is vegan and gluten free.

Enjoy immediately. Or, let the curry cool then divide into food storage containers.
