Mediterranean Salad Pizza

Smoky tempeh bacon, herbed ricotta, pan-seared artichokes and many more flavors combine to make an easy weeknight dinner. 100% vegetarian and 100% delicious. Also, half of a pizza (about 3 small, flatbread slices) has about 30g of protein. Look at you, eating pizza and being healthy!

My omnivore husband ate this pizza today for lunch and dinner. My 9yo daughter proclaimed the tempeh bacon to be “really yummy… not exactly like bacon, but smoky and yummy!”

Let’s Make Pizza!

Spread a cheesy mixture on the crust, top with pan-seared veggies, bake, and finally top with mixed greens and balsamic glaze. You now have an epic, but easy, salad pizza on your table!

Vegetarian Ingredients

Pizza Crust: Wander through your bakery aisle and explore all the flatbread and pizza crust options! My grocer carries these vegan flatbread pizza crusts. I’ve also made these with naan flatbread. Maybe you have a favorite gluten-free flatbread? I’ve heard the 2-ingredient dough (greek yogurt and self-rising flour) also makes a fabulous pizza crust! The options are endless.

Cheese: This recipe uses ricotta (amped up with basil and lemon juice) and mozzarella. For a vegan salad pizza, substitute your favorite spreadable or shredded non-dairy cheese. Miyoko’s vegan mozzarella would be my starting point!

Toppings: Smoky tempeh “bacon” strips are fabulous when pan-seared. They bring a meaty flavor and texture. You also pan-sear red peppers, red onions and marinated artichoke hearts. All those beautiful crispy, caramelized edges will give your pizza a beautiful depth of flavor!

Salad: After baking your pizza, add some mixed spring greens to the top. Then drizzle liberally with balsamic glaze.

Prep The Crust

Mix basil and lemon juice into ricotta. Spread on your flatbread. Sprinkle with shredded mozzarella.

Pan Sear Veggies & “Bacon”

Chop tempeh bacon into small pieces.

Heat olive oil in a pan, over medium-high heat. Add red pepper, red onion, marinated artichoke hearts and the “bacon”.

Cook for about 8 minutes, or until the veggies have nice sear marks and have softened some.

Bake Pizza

Add the pan-seared veggies and “bacon” to the pizza. Brush crust edges with olive oil, if desired. Follow baking instructions on your flatbread or pizza crust. These products all differ greatly, so follow instructions for best results. 8-10 minutes is probably a safe bet for most pre-cooked flatbreads.

Salad & Balsamic Glaze

Transfer pizza to a cutting board. Top with mixed spring greens and drizzle with balsamic glaze. This salad pizza is so good, that I’ll bet you $5 that you double the recipe the next time you make it!

Salad Pizza Variations

  • This is more of a template than a recipe. It’s flexible for your tastebuds and what you have in the fridge. Asparagus to Zucchini, you can make it your own!
  • Salad Pizza is an easy dinner for families: make one following this recipe for veggie-lovers, and one just with cheese for the pickiest of palates. If you’re a mixed-diet family, add meat topping of choice to one.
  • Experiment with goat cheese or feta, instead of ricotta!

This recipe is for one flatbread pizza, so that you can double (or triple) based on the size of your family. 



  • 1 flatbread or naan, precooked
  • 1 tsp olive oil
  • 1 cup ricotta
  • 1/2 cup shredded mozzarella
  • 1 tsp fresh basil, minced
  • 1/2 tsp lemon juice
  • 1/2 red pepper, thinly sliced
  • 1/4 red pepper, thinly sliced
  • 3 seitan smoky “bacon” strips, chopped
  • 1/4 cup marinated artichoke hearts, chopped
  • 1 1/2 cups mixed spring greens
  • balsamic glaze, to taste


  1. Brush lightly with olive oil
  2. Pan sear for 10 min: red pepper, red onion, sundried tomatoes & seitan bacon cut in “bits”
  3. Basil and lemon ricotta, chopped artichoke hearts, and pan seared ingredients
  4. Top rack hot oven (450-500) for 5 min
  5. Top with at the end: Mixed spring greens

  6. Easy to make one for flavor-seekers and one for picky palates: one with ricotta & shredded cheese, seitan bacon bits, and salad on the side


Vegetarian: This recipe is vegetarian.

Vegan: Substitute dairy-free cheese.

Gluten-Free: Use a gluten-free crust and omit seitan bacon (which contains vital wheat gluten).
