Peach Sorbet Recipe: Frozen Peach Slices + Vitamix

Let’s Make This Peach Sorbet Recipe! 

Ripe, juicy peaches are summer’s most perfect fruit! Who’s with me?!

Here in Colorado, we wait all year for huge, juice, soft peaches from Palisade, CO. Last summer, we were camped out at an RV park in Palisade that was surrounded by a peach tree farm. Trust me, we never got sick of peach juice running down our forearms!

But… that seasonal window for PERFECT peaches is short. Thankfully, frozen peach slices are the perfect substitute all year round.

You’ll love making a quick, plant-based dessert without refined sugar (or ice cream machine).

Agave syrup is a honey-like sweetener from the agave plant. It is low-glycemic which means it won’t give you a sugar crash & is great for diabetics.

All you need is frozen peach slices, some lemon juice & agave, a pinch of salt and the warm water. Oh, and a bad-ass, high speed blender.

I spent years repeatedly buying $30 blenders, but I decided this was the year for me to finally get a Vitamix. Nope, Vitamix didn’t pay me to say that, it’s just far more powerful than the “make a margarita” kind. It’s just a beast & can even blend soup AND heat it up. Nutso!

Blend for 20 seconds intervals. Remove the lid & use a long handled spoon / tamper to stir the contents well. Repeat for about 5-7 minutes, stirring every 20-30 seconds. You may need to add more warm water one tablespoon at a time.

If serving the peach sorbet immediately, transfer to serving dishes. I find that this peach sorbet recipe has the perfect smooth texture right after blending.

You can also make the peach sorbet ahead of time. Transfer to a metal loaf pan and freeze. Remove from the freezer about 20 minutes before serving to thaw slightly.

Have a Summer Dinner Outside

This peach sorbet will hit the spot after a lazy dinner in the yard or on the deck, in the golden light. You can avoid heating up the kitchen by grilling some veggie & halloumi cheese kebabs and making easy vegan BBQ beans in your Instant Pot.

  • 16oz frozen peaches
  • 3 Tbsp agave or honey
  • 1 Tbsp lemon juice
  • pinch sea salt
  • 1/4 cup warm water

Instructions

  1. Add all ingredients to a high speed blender or food processor.
  2. Blend for 20 seconds intervals. Remove the lid & use a long handled spoon to stir the contents well.
  3. Repeat for about 5-7 minutes. You may need to add more warm water one tablespoon at a time.
