Valentine Pink Chocolate Crispy Treats (Vegan & GF)

Classic crispy marshmallow treats with a twist! This Valentines Day, my 9-year-old sous chef helps make pink & chocolate crispy treats which everyone in her class can enjoy. Vegan, gluten-free and 100% delicious!



  • 4 cups chocolate rice cereal (I used Nature’s Path Koala Crisp)
  • 10oz vegan marshmallows (I used Dandie’s)
  • 2 Tbsp Earth Balance butter
  • 2 Tbsp coconut oil
  • 1 packet natural pink food dye powder
  • 1/4 cup vegan chocolate chips
  • 1 tsp coconut oil


  1. In microwave, melt marshmallows, 2 Tbsp coconut oil, and vegan butter. Stir well with a fork every 30 seconds – 1 minute. Melt for a total of 3-4 minutes. 
  2. Add natural food coloring and stir well. 
  3. Pour into large bowl with chocolate rice cereal.
  4. Wet hands well, then combine ingredients by hand.
  5. Press into a lightly oiled dish or pan.
  6. Chill in the refrigerator for a few hours or overnight.
  7. Slice into 10-12 pieces.
  8. Melt chocolate chips and coconut oil in a small bowl for 45 seconds.
  9. Stir well with a spoon.
  10. Use the spoon to drizzle the melted chocolate over the tops.

Melted marshmallow texture: It will not be thin and stretchy like traditional marshmallows, but they will mix with the cereal the same.
