Slow Cooker “Dump and Go” Vegan Corn Soup

Livin’ the busy life? Yeah, me too. We all need a couple of “dump and go” slow cooker recipes in our back pocket. Something the family will like, requires minimal effort, and uses ingredients already in our kitchen. Bring on the late ballet practice or karate lesson… dinner is covered.

There are tons of great corn chowders on the internet. But if you don’t eat dairy, it’s honestly hard to get that smooth texture that only comes from heavy cream. I happen to LOVE creamed corn. Like, in college I ate instant ramen like everyone else… but I also regularly ate a can of creamed corn as a snack.

It has a creamy texture but still has bits of corn and whole, sweet kernels.

This soup reminds me of creamed corn… in the best way!

This vegan corn soup is unique because it has hidden protein from creamy soft butter beans and hidden vegetables. Your family will likely not notice any of it. My daughter ate her whole bowl, and I asked what she thought of it. “Mmmmm… corrrrrrrn,” she said.

Then I told her there were also onions, carrots, butter beans and potatoes in the soup. Her jaw dropped. Then she shrugged and said “It just tastes like corn!”

Let’s Make Slow Cooker Vegan Corn Soup

This is tricky, ok? Wait for it…..

  • Step 1: Dump all the ingredients into your crockpot.
  • Step 2: Turn it on and go to work.

😂 It’s really that simple in the morning. Diced petite gold potatoes, frozen corn, diced carrot (you could also use frozen carrot), onion, a drained can of butter beans, and vegetable broth… dump it all in. Set your slow cooker to low for 7-8 hours.

After helping with math homework, pour in a little plain / unsweetened plant milk (I used almond milk). Then grab your immersion blender / stick blender and give it a few good blends.

I blended until you couldn’t identify the butterbeans, carrots and potatoes BUT the corn still had some texture. If your family would rather have a totally creamy texture, keep on blending.

Tips for using immersion blenders:

  1. Submerge the dome at the end under the surface of the soup. There are little vents on the dome and you want to keep them under the surface of the liquid. This will prevent splattering hot soup all over you & your kitchen!
  2. Keep the dome away from the bottom of the bowl… aim for the middle. If it gets too close, it’ll make a crazy vortex and suction down to the bottom. This isn’t ideal for blending.

I added a few handfuls of frozen corn kernels right at the end. Much like frozen peas, they’ll defrost and warm up really quickly. Then you get a nice bowl of creamed corn soup… with some yummy, sweet kernels mixed in. I’m a topping nut, so I also added a few scissor-snips of green onion and a shake of smoked paprika. Mmmm.

Ingredients

  • 1 pound petite gold potatoes (or other small, tender potatoes)
  • 1/2 white onion, diced
  • 2 cups frozen corn kernels
  • 1/2 cup carrots, diced
  • 114oz can butter beans, drained
  • 32 oz vegetable broth
  • plant milk (plain, unsweetened)
  • optional garnish: sliced green onion, smoked paprika, extra frozen corn kernels

Instructions

  1. Add all ingredients – except plant milk and garnish – to a slow cooker / crockpot. Set your slow cooker to low for 7-8 hours.
  2. After cooking, pour plant milk in. Then use an immersion blender / stick blender until the soup is creamy enough for your taste.
  3. For extra corn texture, add a few handfuls of frozen corn kernels directly into the soup. Much like frozen peas, they’ll warm up really quickly. Then you get a nice bowl of creamed corn soup… with some yummy, sweet kernels mixed in.
  4. Serve and top with green onions and smoked paprika.
