Everyday is (Vegan) Taco Tuesday!

I love tacos because they’re an explosion of different flavors and textures in each bite. I also love them because – as a mom – they’re easy. 😉

Some of you are just here for a recipe. If so, there’s a link at the top to “jump to recipe”! Respect. That’s me most Tuesdays LOL.

But, maybe you’re here because this is an accepting space for families who are trying to eat more veg meals. Maybe you feel pressure to be the perfect vision of a healthy parent, and other blogs stress you out by fancy ingredients and stuff your kids would never eat. My friend: WELCOME. Tacos are your new dinnertime bestie. Everyone likes them, they’re flexible & use whatever you’ve got, and it’s simple to cook for a mixed-diet family.

They can be as simple as a box of taco shells, a can of beans & canned corn. Or you can let your inner chef loose on some fun 6-Ingredient Hawaiian Tacos with grilled pineapple & teriyaki tofu. And if you need an easy veg meal to prep for work lunches, a burrito bowl with quick smashed guac is a killer choice. Plus, you’ll save by not going to Chipotle every day. Ermm… just sayin’.

Let’s Make Some Vegan Tacos, Friends!

Tell your brain to stop worrying about how much kale you eat. Put some in your smoothie tomorrow and you’ll be fine. Today, we’re gonna fill our bellies with craveworthy vegan tacos that your family will love!

Grab these vegan & gluten-free ingredients

  • Pantry: corn taco shells or corn tortillas, can of beans, can of corn (have fresh? cool, use that), cashews, nutritional yeast, chipotle powder.
  • Fridge: red bell pepper, cilantro, lime juice

Chipotle Cashew Sauce in the Blender

Soaked cashews get soft and creamy… which makes them ideal for seasoning & blending into a creamy sauce!

The only part of this recipe that takes a bit of time is soaking the cashews. If you are planning to make this later today and you’re home, go ahead and toss the cashews in some water now.

1 hour is ideal, but 2 is better. Heck, leave ’em in all day while you’re at work. You’ll be fine. If you don’t have a high-speed blender, a long soak will definitely help your standard issue blender make a smoother sauce.

The nutritional yeast has a slightly cheesy flavor and the chipotle is a little spicy with some smoky chile flavors. Lime juice is a fun, punchy contrast.

Just blend blend blend until it’s smooth.

Taco Filling

While the cashews are soaking, heat a large skillet over medium-high heat. Add a small drizzle of oil. It will prevent sticking, but we want all the lovely char-grilled marks on the veggies!

When the pan is hot, add beans, corn and peppers. Season with salt, pepper and chipotle powder (if desired, omit if you’d rather control the spice level by serving). Stir frequently, and remove from heat when the beans and peppers have slightly softened… 5-8 minutes.

To serve, I prefer to leave all of the ingredients separate so everyone can assemble it their own way. Drizzle the lime chipotle cashew sauce with a spoon.

Ingredients

  • 14oz black beans, drained
  • 1 cup corn kernels
  • 1 red bell pepper, sliced
  • cilantro
  • taco shells or tortillas

Lime Chipotle Cashew Sauce

  • 1 cup unsalted cashews, soaked 1-2 hours
  • 1/2 cup lime juice
  • 1/4 cup nutritional yeast
  • 1/4 tsp salt
  • 1/2 tsp chipotle powder

Instructions

Lime Chipotle Cashew Sauce

  1. Add cashews to a large bowl. Cover with cool water. Leave at room temperature to soak for 1 hour (up to overnight).
  2. When softened, drain water. Add cashews, chipotle powder, salt, lime juice and nutritional yeast to a high speed blender. Pulse to combine ingredients. Then blend until smooth.

Tacos

  1. While the cashews are soaking, heat a large skillet over medium-high heat. Add oil.
  2. When the pan is hot, add beans, corn and peppers. Season with salt, pepper and chipotle powder (if desired, omit if you’d rather control the spice level by serving).
  3. Stir frequently, and remove from heat when the beans and peppers have slightly softened (5-8 minutes).
  4. Assemble tacos and drizzle cashew sauce over tacos.

Notes

This recipe is vegan and gluten-free.

Store cashew sauce in an air-tight jar in the refrigerator for up to 5 days.
